I don't know if the values are actually modified (I guess I should setup
a VM with Ubunut 16.04 or 18.04 to check the issue myself). Maybe they
are just read and rewritten via some 256-bit read-modify-write
instruction that rewrites the original value into the array?

My understanding was the same as yours, and I wrote code that relies on
not writing beyond the terminating 0, and it crashes for someone on
Ubuntu 16.04 and 18.04.
