With plants, at least, a new species can technically be created in one generation with no intermediates possible. If the parents are diploid but the offspring tetraploid, the offspring could not reproduce with the diploid parent species to produce fertile young, but could with other tetraploid plants produced the same way. That meets the definition of different species. But normally species transitions are gradual, and they can and do leave fossils.

Other than something like what I described with plants, the so-called "jumps" are actually slow, but may appear quick compared to million-year timelines. Especially when intermediate fossils haven't been found. For example, perhaps you may be considered a (de-)evolution of humans to something dumber, and it would look like a species jump if they didn't find your monkey ancestors.
