A dab of BBQ sauce wets my whistle. Dogs happily eat the same thing, every day. One man famously eats nothing but mac & cheese, year after year, with no apparent side effects. Assuming the guy is managing his caloric intake at normal levels and he is using US highly fortified milk to make his mac & cheese, he would not necessarily show any visible effects for a long time. Absent any dietary supplements, eventually he will crash and when the emergency room does a CBC test, he will be pumped full of all sorts of things to get him back to normal. This will be VERY expensive and he had better have some really good health insurance or he will be owing the hospital something in the neighborhood of at least $100k.

Fortified wheat to make the macaroni as well. I just looked at the ingredients of Kraft mac & cheese and it (actually the wheat) is fortified with niacin, thiamine, riboflavin, folic acid, iron. The cheese powder has extra milk protein and various phosphates added. Milk will have Vitamin D added. I don't see a source of Vitamin C, how would he avoid scurvy? Wheat was fortified since about 100 years ago, many of the children of very poor people (esp. in the deep south) suffered from vitamin related diseases such as rickets since many ate almost the same thing (such as bread or cornbread) every day. Poor Asian kids often have beriberi because white rice (with the germ removed) was fashionable compared to brown rice, and, like whole wheat, the vitamins were removed.

There is that and many other things that are not mentioned, plus if you check the percentage of RDA of the ingredients you will find you have to eat a LOT of mac & cheese to get close to your RDA for most of them.
