The latter is unlikely to work since those flybacks also generate the 
horizontal deflection, plus helper voltages, plus, plus. You'd also have 
to replicate all that, separately, and then this whole project can turn 
into an expensive and time-consuming can of worms.

IMHO finding the flyback transformer or a used monitor you can scavenge 
it from is the only viable option.
