iStat Menus tracked several temperatures on my M1 and older Minis. On my 
M4 it shows only the SSD temperature. Is that all the sensors an M4 has?

Assuming you are running the latest version, this is most likely just
a bug. I'd contact the iStat Menus developer about it.
