Mine can interrupt processes when Energy Saver says to sleep. Mine seems
to count from the last user input, but software can signal it to stay awake.

I think it was 10.9 that I expected to download while I slept. In the
morning, I found that it had gone to sleep 15 minutes after I went to
bed; so I still had hours of downloading in front of me.

I may be mistaken about which upgrade that was. On subsequent upgrades,
it stayed awake. There are some kinds of downloads that Energy Saver
will interrupt if I forget to extend the wake time.

Here's a complaint that a Mac would corrupt a TM backup by going to sleep.

If Energy Saver times out during your process, maybe something in the
process keeps the computer awake. If the thing that was keeping the
computer awake stops during the wrap-up, I guess the computer would
immediately sleep.
