You could probably set up the old iMac to run as a printer server via 
Printer Sharing. It could alos be used for other server options like a 
file server or email server.

Other options are:

  - for printing, it could be Gutenprint, but the "latest" news
    (October 2019) mentions problems with Catalina, so it may not
    work with Big Sur, let alone M1 Macs.

  - for scanning, there is VueScan which does work with Big Sur,
    but no mention of M1 Macs.

but although they do work with a wide variety of old printers and 
scanners, they might not work with your particular model.
