Probably because they use outlook and it doesn't.

It is quite easy to make outlook produce decent emails.

Need to:
set it to always display plain text.
 compose in plain text
 use internal editor (not word)
set it to put chevrons in front of quoted text
create a proper sig (with "-- " which works OK on full outlook, just
   not express)

Then you either reply with no sig, or move the bits you are replying
to to the body and delete the rest.

Not as good as a proper email program, but do-able.

I wish our email programs had utilities to clean up outlook style
replies.

e.g. reply would only quote the last reply from anything top posted.

view processing options:
Treat black text as quoted and coloured text as new (and vice versa)

Reversing all the quoted sections so you can read them.

These would then display with chevrons and pressing reply would
produce an email based on the view.

An option to create an HTML part that displays on outlook the way the
plain part displays on messenger (or pluto), so they know what they
are missing.
