Apple recently got rid of its Java Preferences App that allowed users to run multiple JVMs on their computer and replaced it with Oracle's Java Control Panel in System Preferences. 

Using it, I see only the latest JVM installed on my computer, Java 7.0_07, and don't see any way to add/configure additional JVM's in the control panel.

I like being able to use different versions of openjdk in addition to the Oracle Java 7, so is there a way to see/add/configure them in this new control panel?

Really?

I'm on a computer running Mac OS/X 10.7.5 and it has a Java Preferences App.

I too have 10.7.5, but I ran Software Update earlier today and applied 
Java for OS X 2012-006.  Per http://support.apple.com/kb/HT5493 this 
update uninstalls the Apple-provided plugin and the Java Preferences 
application.

No, because there are no "Find" "Remove" or "Add" buttons on Java > View.

Using OS X 10.8.2, with the latest Java for OS X 2012-006 update.

The Java control panel changed on Windows too. On windows you can
still add a JVM with Java|View|Add

There are four possible ways to poke a card into a slot.
Nearly always, only one way works. To me that betrays a 
Fascist mentality, demanding customers conform to some 
arbitrary rule, and hassling them to discover the magic
