Well, you have to install the necessary development packages before
compiling to get additional terminal like png, *cairo, etc. If you
don't want to do that (it's not very hard, and doesn't influence any
software already running on your system):

Debian backports (i.e. also ubuntu) have newer versions of gnuplot
available. I guess other distributions have a similar system.

You can install the backports version along with the original one,
you start it with e.g. "gnuplot5" on the command line.
