Ah, well, that's obviously where you are going wrong - not writing
everything in Emacs ;-)

I do do almost all my writing in Emacs.  In particular, I use Gnus for
all my emails, which are in English, German or both, and
ispell-hunspell-add-multi-dic seems work out what is what automatically.
