Because the demand for the return itinerary is different, depending on 
which day you want to fly out. To a first approximation people staying 
around a week are tourists, and shorter periods businessmen, for 
example.

There was a time when businessmen flew out on Saturdays (or even 
Fridays) to benefit from "tourist rates", but as the pace of life 
increased they grew tired of all those "wasted" weekends at their 
destination and decided they'd prefer to spend the time with their 
families and have the company pay more for a Sunday (or even early 
Monday) flight.

The airlines were early adopters of big mainframe solutions to ticketing 
systems, and have been honing these algorithms since at least the 70's, 
so you can be very sure that whatever the underlying reason for 
individual itineraries are, the pricing you see tracks the overall 
demand very closely.
