Have you changed your keyboard or mouse, or how they're plugged in? Your BIOS should have settings to control what causes it to "wake up". Are you sure it actually goes into sleep mode before it "wakes up"? Does the power light change colour, flash etc. as it normally does to indicate it's in sleep mode before it automatically starts again? I had the same issue with Win7 and my Gigabyte motherboard and it fixed it.
