Distilation of alcohol comes under federal law, and it's quite legal to distil alcohol providing your pot still is no larger than 5 liters. I'm not sure about the legal size of reflux stills. Most of the brew shops sell them. Strictly speaking, pot stills larger than 5l are illegal, but I've had a 20l for more than 20 years. I bought it at a brew shop, and i've seen plenty for sale.

For one thing, you're meant to pay excise duty on any spirits that are produced in Aus and to do that you require a licence. Where fractional freezing fits into all this from a legal standpoint is interesting, but I suspect the ATO would argue it is a form of distillation, even though technically it isn't.

It seems you are right. It seems also that these laws are routinely broken and ignored by Govt, since almost every brew shop I have ever visited sells all manner of flavouring essences for the purpose of producing reasonable imitations of various commercially available spirits from home distilled raw spirit. Bit of a joke really.

Bit of a joke really. My Campbelltown (Croation) Hillbilies got done in the 1980's when large areas of Sydney stopped buying Johny Walker. Federal police did raid them and put them out of business. A Polish mate of mine bought their Scotch by the case $50 and no one could tell the difference even came in JW bottles. -- Petzl Arguing with a woman is like reading the Software License Agreement. I have a female friend here who was done for the same thing (although not faking brands like your example AFAIK). This was shortly before I met her, but apparently her setup was pretty large, distilling 200L of wash at a time. Federal police involved. Dobbed in by her ex husband, apparently :)

Bit of a joke really. Do you know why there is a dearth of dry sherry essences ? Everything else, but not that for some reason.
