But you are free to only use a form filler that you have access to
the code of so you can check what it does with the form field
data and know that it can not access anything but that data.

Irrelevant to access to other data on your system.

By definition anything that supplies any data to the
net can be supplying it to more than just what the
user intends to supply data to. That is a separate
problem entirely for which there is no solution at
all and which is just as big a problem with data
supplied verbally or on a paper form.
