ce que je comprend, c'est que si on faisait ça,
ça obligerais l'usager à y faire attention, et bien remettre les options 
obligatoires à chaque fois qu'il redéfinit CFLAGS.
c'est ça qu'on veut éviter.

l'usage de "override" résout ce pb.

je viens de m'apercevoir que la page sur override donne justement un 
exemple avec CFLAGS :

ça confirme mon intuition
(j'aimerais que tu expliques mieux si tu n'es pas d'accord avec ça).

et c'est très curieux que cet exemple ne soit pas repris dans la page 
sur les variables de commandes.
(mais bon, j'ai l'impression que cette doc n'est pas à 2 contradictions 
près ...)
