It will definitely take longer than your SSD. Hard drives will *always*
be much slower than SSDs.  The older the hard drive, the slower it is.
Also, if the hard drive is a 5400 RPM drive, it will be much slower than
a 7200 RPM drive. And the size of the drive naturally effects how long
surface scans will take (a 250GB drive will scan much faster than a 4TB
drive). With that said, you're probably right that it's smaller than 1TB
(probably more like 250 or 500, or possibly 750 GB). So you are probably
looking at 20 minutes to an hour or so, depending.

It's not hard. The basic steps are install the new hard drive in the
computer, connect the Time Machine backup drive to the computer, reboot
while holding down the Command-R keys to boot on the recovery partition,
and then follow the prompts to restore from the backup.
