There is Merlin 32 from Brutal Deluxe, which will compile under Mac OS X, as I've recently learned. If that's your primary goal then you're probably going to be a little disappointed with current cross-development options, unless…. and this is a big "unless"... … you can use AppleShare to mount volumes on your IIgs desktop. It's an ongoing discussion. Cross-development is slowly getting better and better.
