I've been meaning to give Minix a try one day. Also you don't mention the BSDs, which all still have good support for old CPUs. KolibriOS should run well. More important than the old CPU/RAM for obscure OSs might be the peripherals like sound card, GPU, USB, and Ethernet, because with obscure OSs there will probably only be drivers available for specific chipsets.
