Someone is trying to develop a cultivar with a longer stem that will hold the head higher above the soil. https://www.youtube.com/watch?v=JH5V4HE2akA Trivia: iceberg lettuce got its name from being shipped in chipped ice in the early days. In Steinbeck's 'East of Eden' that's Adam's big idea although it doesn't work out well. Is it good that supermarkets have most produce year around? I don't know. It's one more way to remove people from the reality of the seasons. Why look forward to fresh sweet corn if it's always available? This time of year many people were canning the end of the harvest.
